Found this really quick and easy recipe in our local paper’s food section. The preparation time is only 5 minutes and the cooking time is 15 minutes. Believe me these types of recipes are not all that easy to come by, so when I see them I snap them up.

Tortellini Soup Recipe

Tortellini and Spinach Soup1 tablespoon olive oil
3 garlic cloves, chopped (use the minced garlic in the jar to save time)
1/2 cup white wine or dry vermouth
1 quart low-sodium chicken broth
1 (9 os. package fresh tortellini stuffed with chicken and prosciutto) Find it in the refrigerated section at your grocery store.
Black pepper
1 bunch baby spinach (get bagged it’s already washed and you can just throw it in)
1/2 cup freshly grated parmesean cheese (save time buy it in the bag)
2 springs fresh oregano or basil (optional)

Instructions:

Start broth boiling in a saucepan. (boiling the broth a bit before adding makes it taste less canned)

Heat oil in a large saucepan over medium heat. Add garlic; cook until golden, 1 to 2 minutes. Pour in wine and heat to a boil. Cook until wine is slightly syrupy, about 6 minutes. Stir in broth; heat to a boil. Add tortellini; cook according to manufacturers directions.

About 2 minutes before the pasta is done, stir in spinach; cook until spinach wilts slightly. Season with pepper to taste.

Lade into bowls, sprinkle with Parmesan. Garnish with organo or basil if desired.

Serve with a loaf of french bread and you’ve got a nice winter meal.

Makes 2 servings

Tips
Stir in a beaten egg a minute before serving for extra richness.

Can be made vegetarian, by using vegetable broth and cheese tortellini

You can give the soup more of an Asian flavor by replacing the tortellini with won tons (find in frozen section) and finishing it with sesame seed oil instead of Parmesan. Also serve this Asian version with egg rolls (find in the frozen section) and sprinkle chow mein noodles over the soup.

Easy Kids Crafts

The dog days of summer are here. If it is too hot to go outside, there is a lot of fun stuff you can do inside. If you want to keep the cost down try this homemade play dough recipe from the Tightwad Twins book:

Homemade Play Dough Recipe:

Mix together -2 cups flour, 1 cup salt, ½ cup cornstarch, 1 ¼ tablespoons baking soda, 2 cups water, 1 tablespoon cooking oil and a pinch of food coloring. Microwave for about 4 minutes on high and store in an air tight plastic container.

If you don’t want worry about the kids cooking, the Tightwad Twins also have a recipe for no cook homemade play dough recipe.

No Cook Homemade Play Dough Recipe: Mix together – 1 cup flour, 1/4 cup salt and 3/8 cup hot water from faucet. Add food coloring if desired. The kids would probably have fun mixing this themselves.

My favorite recipe from their book “Saving Money with the Tightwad Twins: More Than 1,000 Practical Tips for Women on a Budget” by by Ann Fox and Susan Fox is the funky edible play dough one. These crafts you can eat and eating is one of favorite indoor and outdoor activities.

 Edible Playdough

 1 cup butter or margarine
6 hard cooked egg yolks, mashed
2 tsps. Cream of tarter
5 cups all purpose flour
1 cup shortening
2 ½ cups sifted powdered sugar
2 tsps. Baking soda
1 tbsp. vanilla extract
Red, yellow or green paste food coloring

Cream butter and shortening: add sugar, beating until light and fluffy. Add the egg yolks, baking soda, cream of tarter and vanilla beating well. Add flour a little at a time, mixing well. Divide the dough into 4 equal parts. Color one part red, one yellow, one green and leave the dough part plain. Wrap each part up seaparately in plastic wrap and chill at least 1 hour.

Kids can hand-shape the dough into all kinds of thing or they can roll it out and cut the dough with cookie cutters.

Bake their creations at 350 degrees for 8 to 10 minutes. Let the cookies cool on the baking sheet a few minutes.

Basic Frosting Recipe:

Mix ¼ cup butter (softened) and ¼ cup milk. Add enough confectioners sugar to make spreadable frosting. Makes enough to frost a 9 inch layer cake.
