Easy Soup Recipes – Tortellini and Spinach Soup
Found this really quick and easy recipe in our local paper’s food section. The preparation time is only 5 minutes and the cooking time is 15 minutes. Believe me these types of recipes are not all that easy to come by, so when I see them I snap them up.
Tortellini Soup Recipe

Tortellini and Spinach Soup1 tablespoon olive oil
3 garlic cloves, chopped (use the minced garlic in the jar to save time)
1/2 cup white wine or dry vermouth
1 quart low-sodium chicken broth
1 (9 os. package fresh tortellini stuffed with chicken and prosciutto) Find it in the refrigerated section at your grocery store.
Black pepper
1 bunch baby spinach (get bagged it’s already washed and you can just throw it in)
1/2 cup freshly grated parmesean cheese (save time buy it in the bag)
2 springs fresh oregano or basil (optional)

Diabetic Desserts – Chocolate Brownies
In the past ice cream, cookies, and other sweets were considered off-limits to people with diabetes. In her book, The Everyday Gourmet Diabetes Cookbook, Mary Donkersloot, R.D. explains research has shown consistently shown that common table sugar and other sugars when consumed separately or as part of a meal or snack do not have a greater impact on blood glucose levels than other carbohydrates. Because physicians have a better understanding on the effects of different foods on blood glucose, sweet foods have become an acceptable part of the diabetes meal plan. She recommends diabetics eat sweets in small portions and learn what they do to their blood glucose.

I have these women friends who are gourmet cooks. Really. I, myself, take after my Mom. When I was a kid I remember how she could could come home from work and put a balanced dinner on the table in about 20 minutes. She was amazing. If the kitchen was the Olympics, Mom would be Jackie Joyner.
Anyway, even when I’m sitting in one of our favorite cafes slurping up Pho Ga, we like to talk about writing a cook book called, It’s Not the Same But It’s Not Bad! Of course, my friends don’t take shortcuts, they measure, and they follow recipes. But that’s not what I do.
