According to national statistics, in 2005 approximately 7 percent of the population has diabetes. If you take a sub-population of people 60 years or older the percentage increases to almost 21%. Being diagnosed with diabetes can be overwhelming for many of us. I know when my father-in-law was diagnosed my mother-in-law felt so limited by all the dietary restrictions. Often when they ate meals out my father-in-laws blood sugar would soar. Not because they weren’t careful but sometimes restaurant sauces contained large amounts of sugar. You wouldn’t know that by just looking at the menu.Preparing meals and desserts at home can be difficult too. You have to have the proper balance of carbohydrates and proteins. When you prepare desserts you have to be careful because not all artificial sweetners are safe for all diabetics. Even then it is tricky figuring how much of the sugar substitute to use. A cookbook written especially for diabetics can be really helpful for people who are just learning the ropes of dealing with diabetes or even for those who have been dealing with it for years and just want to expand their repetoire.
